Together with the spleen, they are the postnatal foundation - the source of creation and transformation of food into energy, which then nourishes the blood and subsequently all the organs in the body. The spleen helps digest and break down food. If the spleen does not transform, then the food in the stomach cannot be broken down.
Parsnip soup
What we need: 1 tablespoon of butter, 1 small onion (preferably white), 2 medium-sized parsnips, 2 smaller green, more acidic apples, 1 l of water or vegetable broth, salt, white pepper, bay leaf, allspice and nutmeg to taste, beetroot/nettle/celery or spinach leaves.
How to do it: fry the onion in butter, add finely chopped parsnip and sauté for about 5 minutes. Pour in broth or water and add finely peeled and chopped apples, salt, add bay leaf, allspice and cook over low heat for about 30 minutes. Blend with a stick blender, add chopped celery/nettle/beetroot or spinach and add mace, cook briefly and serve.
Pork chops with cranberry sauce and pumpkin cabbage
What we need: cutlets according to the number of diners, white pepper, salt, rosemary, oil
How to do it: Pat the chops dry, season with salt and pepper. Tear off the rosemary sprigs, heat the oil, add the pepper and rosemary, and quickly fry the chops.
Cranberry sauce
What we need: 4 tablespoons of cooked cranberries, 1 teaspoon of rum, 300 ml of warm water, 5 mint leaves.
How to make it: Pour warm water over the cooked cranberries in a colander and press through the colander until a thick pink sauce forms. Season with rum and 5 mint leaves and boil for 5 minutes. Remove the mint and serve.
Pumpkin cabbage
What we need: 1 small pumpkin, oil, 1 onion, salt, wine or apple cider vinegar, cumin, sugar.
How to do it: Cut the washed pumpkin in half and use a spoon to remove the seeds and soft center. Peel, cut into strips and grate into wide noodles. Sauté the onion, salt, add cumin and carefully simmer the pumpkin so that it does not fall apart, acidify and serve as a side dish to vegetable dishes or fish or meat.
Beef tail in wine
What we need: 1 kg of pig's tail, 60 g of fat, 2 onions, 0.75 l of red wine, fresh ginger, pepper, bay leaf, thyme, salt, 1 tablespoon of psyllium and 30 g of butter for the roux, lemon zest from 1 lemon.
How to do it: chop the cleaned pigtail at the joints and salt it. To melt the fat, add finely chopped onion, spices, and when the onion is golden, add the meat. Simmer, occasionally adding wine.
On the side, prepare a psyllium roux. Remove the soft meat, thicken the juice with roux and add lemon zest and cook, strain the sauce and season to taste. Serve with onion salad.
